Easy Healthy Breakfast Recipe: Egg White and Avocado Bake

Easy Healthy Breakfast Recipe: Egg White and Avocado Bake

Ingredients

  • 1 ripe haas avocado, de-cored, peeled, halved and sliced
  • 5 eggs
  • Sea salt
  • Ground black pepper
  • 1/2 table spoon of real unsalted butter

Instructions

  1. Preheat oven to 375 F.
  2. Crack eggs into a mixing bowl, and spoon out the egg yolks. Add a pinch of sea salt and a dash of ground black pepper. Slightly whisk.
  3. Add half of the avocado slices into egg white.
  4. Grease a small baking pan or small corning ware dish (15-oz oval) by brushing butter all around.
  5. Pour egg whites into baking dish or corning ware.
  6. Bake for 10 - 15 minutes, or until egg whites are fully cooked and in solid shape.
  7. Transfer cooked egg white onto a plate, and top with the rest of the avocado slices.
