Cherry Goat Cheese Melt

Cherry Goat Cheese Melt

Ingredients

  • 1 table spoon of butter, divided
  • 1/4 cup of cherries, de-cored, de-stemmed and cut into halves
  • 1/4 cup of organic soft goat cheese or goat cheese crumbs
  • 1/2 table spoon of organic agave nectar or raw honey
  • 2 slices of whole wheat bread (or healthy bread of your choice)

Instructions

  1. On stove top and over high heat, add one of the 1/2 table spoons of butter to frying pan.
  2. When butter melts, reduce heat to medium, and add cherries and agave. Stir well, and let cook for about 5 minutes, while continuing to stir often. Set aside when done.
  3. Heat another frying pan on high over stove top. Add the remaining 1/2 table spoon of butter, and wait for it to melt.
  4. Reduce heat to medium, and add one piece of bread. Evenly top bread with goat cheese.
  5. Let cheese melt for about two minutes. Lay second piece of bread over cheese. Flip sandwich over with a spatula, press with light pressure, and let the other side cook for one minute.
  6. Continue to flip one side to the other, as you would a regular grilled cheese sandwich. When outside appears golden-brown and cheese's completely melted., turn heat off.
  7. Transfer sandwich onto a plate, and top with cooked cherries.
  8. Enjoy!
